Biryani has been enjoyed in India for centuries, and the dish has evolved to incorporate different regional flavors and ingredients. Whether you're a seasoned home cook or a novice in the kitchen, chicken biryani is a delicious and satisfying meal that's sure to impress.

INGREDIENTS

  • 1 cup Basmati rice
  • Salt, 1 teaspoon
  • 5 to 6 cups of Water
  • Chicken thighs, 400 grams
  • 14 teaspoons of powdered ginger
  • Red chile powder, 1 teaspoon
  • 1 teaspoon of salt 1 lemon's juice
  • 3 onions, lengthwise cut
  • 5 to 6 freshly minced garlic cloves
  • 1 piece of finely chopped ginger
  • 2 to 3 cut green chilies
  • 6 to 8 strands of dice from 2 tomatoes leaves of mint
  • 14 cups loosely packed mint leaves or pudina
  • Oil, 1 1/2 tablespoon
  • Bay leaf two (Tej Patta)
  • one tablespoon of cumin seeds (Jeera)
  • 1 tablespoon Tandoori or Biryani masala
  • 1 tablespoon ghee or butter and 1/4 cup water

INSTRUCTIONS

Rice Cooking: Clean the rice and let it sit in water for 15 minutes. Rice, water, and salt should all be placed in the saucepan and brought to a boil over high heat. Cook the rice until it is 80% cooked through by reducing the flame to medium. Drain this and set it aside.

Soaking chicken: Chicken thighs, salt, turmeric, chili powder, and lemon juice should all be combined in a bowl. Throw this aside and wait 15 minutes.

Chicken Biryani preparation:

Oil is added to a pan. Once heated, add the bay leaf, cumin seeds, cloves, cinnamon sticks, and cardamom pods and sauté for a few seconds. Cook the chicken in the sauce for 3 minutes. Add the garlic, ginger, and green chilies after 3 minutes. Cook for a further two minutes after turning the chicken.

Give it a good stir before adding the onion, tomato, coriander leaves, mint leaves, and tandoori masala. Give this a minute to cook. Spread it out evenly now to cover the pan's base. Spread out the half-cooked rice equally before adding extra mint and coriander leaves as a garnish.

Lastly, add butter, a little more biryani masala or tandoori masala, and a splash of 1/4 cup water. Cook this on low heat for 20 minutes, or until the rice is completely cooked.
