Delicious Potato Salad

This is my mother's recipe for authentic German potato salad. Everyone, German or not, loves it. This recipe can also easily be doubled if you wish to do so. It is often brought to potlucks, and we also have it at home on special occasions, so I often bring it to potlucks. It is not common for leftovers to be left over after meals, but if they are left over, they are not kept for long.




Ingredients:

  • Potatoes, diced and peeled, 3 cups ✅ 
  • The bacon should be cut into 4 slices ✅
  • The onion will be diced into 1 small piece ✅
  • There is ¼ cup of white vinegar in this recipe ✅
  • To the mixture, add 2 tablespoons of water and stir well ✅
  • ½ tablespoon white sugar, or as much as you like ✅
  • Salt to taste, 1 teaspoon ✅
  • Black pepper, ground to a fine grind, ⅛ teaspoons ✅
  • Fresh parsley chopped into a tablespoon✅

Follow these directions:

In Step 1:

You should place the potatoes in a large pot and add enough water to cover them by at least one or two inches. Bring the pot to a boil. You should cook the potatoes until they are easily pierced with a fork, which will take about 10 minutes. After draining the water, allow it to cool for a few minutes and then discard it.

In Step 2:

Over medium-high heat, place the bacon in a large, deep skillet over medium heat while the potatoes are cooking. As soon as they are browned and crisp, turn them over and continue to fry for about 10 to 12 minutes. When the bacon is cool enough to handle, transfer it to a paper towel-lined plate and crumble it once it has cooled down. Keep the bacon grease in the skillet so that it can be used later.

In Step 3:

Over medium heat, cook the onion in the bacon grease for 6 to 8 minutes, until it has browned. Bring a pot of water to a boil in a pan with vinegar, sugar, salt, and pepper to taste.

In Step 4:

When the water is boiling, add the potatoes and half of the crumbled bacon to it. Three to four minutes should be enough time for the food to heat through.

As soon as the potato salad is warm, transfer it to a serving dish and sprinkle the remaining bacon over it. You can garnish the dish with parsley if you wish. You should serve the dish to the customer as soon as possible.
